High-Quality Milk
How does fairlife create ultra-filtered milk that tastes so good? It begins with high-quality milk sourced from fewer than 40 supplying farms. These supplying farms are located near our production facilities, allowing us to quickly chill and process the raw milk at peak freshness. All supplying farms must adhere to our rigorous care standards and undergo regular audits.
Pasteurization and Ultra-Filtration
The high-quality raw milk starts its journey as soon as it arrives at a fairlife production facility.
First, we test the raw milk according to both the Grade “A” Pasteurized Milk Ordinance (PMO) and our own rigorous internal requirements. These tests may include raw milk microbiological, antibiotic, and product composition testing.
Then, we process the milk and harness everything that makes dairy naturally great to turn it into something even greater. This involves two key steps: pasteurization and ultra-filtration.
For pasteurization, fairlife employs Ultra High Temperature (UHT) and High Temperature Short Time (HTST) methods. These techniques destroy harmful pathogenic microorganisms while producing both extended shelf life and shelf-stable products.
Our ultra-filtration process concentrates the natural protein in milk while removing lactose and some naturally occurring sugars. The result? Ultra-filtered milk that’s high in protein and 50% lower in sugar than regular milk, and that you and so many others love. We never add protein to our milk during processing. We simply take the protein and minerals that are naturally there and concentrate them. In fact, all fairlife products start with ultra-filtered milk.
Your safety and satisfaction are top priorities at fairlife. All our production facilities comply with applicable quality and safety regulations and our own stringent requirements. Furthermore, independent certification bodies audit our facilities to verify adherence to Global Food Safety Initiative (GFSI) standards.
Bottling and Distribution
Once processing is complete, fairlife milk is bottled and held until it passes quality checks and is cleared for shipping. Remarkably, the typical journey from raw milk delivery to bottle takes less than 48 hours!
Our quality team ensures our products meet our quality and regulatory standards before they head to the stores, including by sampling products for composition analysis and sensory evaluation by trained personnel (a scientific taste and small test).
