This Southwest- inspired soup is loaded with delicious chipotle chili pepper and taco seasoning. The rich taste is perfect for an afternoon lunch or evening dinner.
2 Cloves Garlic – Crushed
1 Medium Onion – Chopped
2 Red Peppers – Chopped
3/4 teaspoon Chipotle Chili Pepper Seasoning
1-2 teaspoons Taco Seasoning
1 teaspoon Chicken Bouillon
2 tablespoons Olive Oil
3 cups fairlife® whole ultra-filtered milk
1/2 cup Flour
2 cups Chicken Broth
On medium heat combine onion, garlic, peppers and olive oil in a medium saucepan. When onions are translucent, about 5 minutes, add 2 cups of chicken broth, chipotle chili pepper seasoning, taco seasoning and chicken bouillon. Bring to a simmer and cook for 20 minutes.
Meanwhile, combine milk with the flour and whisk until smooth. When ready, pour stock into a blender, or use an immersion blender, and blend for 30 seconds. Return mixture to heat. When simmering again, pour milk SLOWLY into the pan while whisking. Bring back to a simmer and cook for 50 more minutes.
Optional: Garnish with sharp cheddar cheese and sour cream.
